Dredge crab in cornstarch, shaking off excess. Deep fry for 4 minutes minute, drain.

Heat wok or large saute pan on high, add oil and sweat the garlic and ginger for about 10 seconds, add the oyster sauce, black pepper, water and butter. Add the sugar and taste.

Lower the heat and slowly stir the sauce until the butter has thickened the sauce. Add the crab to the sauce and toss to coat the pieces evenly. Plate the crab and garnish with scallions and lime wedges. Serve with plenty of napkins and ice cold beer.

Note: You can substitute the Dungeness crab with jumbo prawns, blue crab or lobster.

* Alexander Ong's culinary history is as vibrant & exciting as his cuisine. Born in Malaysia, his career began in "controlled chaos" at the 600-cook kitchen of the Shangri-La Hotel. His expedition west began in Bermuda as the Chef de Partie at the Southampton Princess Hotel. In the years following, Ong helmed kitchens at the Ritz-Carlton Hotels in Atlanta and Amelia Island and served as Chef Tournant at Caesar's Tahoe. Finally settling in the Bay Area, he served as the executive chef for the Orocco East-West Supper Club, the senior sous chef for Stars and opening chef at Le Colonial. In 2001, Betelnut invited Ong to take the reigns of their kitchen. His creativity keeps Betelnut thriving as one of the Bay Area's most popular and successful restaurants.

Add the onion and saut? until it is golden, about 8 minutes. Put in the bell peppers, celery, and garlic and saut? 1 minute more. Mix in the paprika and thyme and cook for another minute. Add the tomatoes, wine, stock, cream, and sausage, and boil until the sauce thickens slightly, stirring occasionally, about 10 minutes. This sauce can be prepared ahead. Cover and refrigerate until needed. Bring it to a boil before continuing.

Preheat the oven to 400 degree oven. Dip the eggplant rounds in olive oil and place on a cookie sheet. Bake until quite soft, about 20 minutes. Set aside.

Add the red snapper and shrimp to the sauce. Reduce the heat to a simmer and cook for 3 minutes. Add the oysters and crabmeat and simmer for 1 or 2 minutes until the oysters are plump. Season with salt and pepper to taste. Arrange the eggplant slices in the center of shallow bowls. Spoon the ragout over the eggplant and serve with rice on the side.

* Louisiana cooks learned long ago that tangy, smoky flavors of pork sausage such as andouille are a perfect complement to seafood. Many classic New Orleans dishes reflect this perfect marriage of the sea and the land. Cajun and Creole classics such as jambalaya, seafood gumbo, stuffed eggplant, and stuffed crab, all link spicy sausage and seafood together. This elegant ragout bathes the seafood in a rich sauce flavored with andouille. The addition of cream makes this a rich and delicious dish for a main course or you can serve smaller portions as an elegant appetizer or first course at a Creole banquet.

Cover and soak for at least 30 minutes or up to several hours. Remove the tough stems and slice the caps into thin shreds.

Bring a large pot of lightly salted water to a boil. Add the snow peas and green onions and blanch for 30 seconds. Drain under cold running water in a colander and set aside.

Heat 1 tablespoon of the oil in a medium omelet pan. Add the eggs, beaten with the salt, to make a thin omelet. Fry until set, turn over, and fry 1 minute more. Transfer the omelet to a plate, and when it is completely cool, cut into thin shreds, about 2 to 3 inches long.

In a small dry frying pan, roast the sesame seeds over low heat, shaking the pan continuously until they are light brown and aromatic, about 5 minutes. Transfer them to a small bowl.

To make dressing. Mix together the vinegar and soy sauce in a small bowl. Gradually mix in the sesame oil.

Heat remaining 2 tablespoons peanut oil in a large nonstick skillet over medium-high heat. Add rice and stir until well coated with the oil, about 3 minutes. Add shredded omelet, mushrooms, snow peas, green onions, and char su and stir until warmed through, about 2 minutes. Toss with dressing and cilantro.

Toss the mixture with the beef, cover, and marinate at room temperature for up to 2 hours or overnight in the refrigerator.

Preheat the oven to 325 degree oven.

In a large Dutch over or heavy lidded pot, heat 2 tablespoons of the olive oil over medium heat. Put in the pancetta and coppa ,and cook until the fat is rendered and pancetta is golden, about 5 minutes, stirring often. Remove the pancetta and coppa from the pot with a slotted spoon and drain them on paper towels. Toss the seasoned meat with the flour in a large shallow bowl. Turn the heat under the pan to medium high, shake any excess flour from the beef, and brown the meat on all sides. Take care not to crowd the pan; brown the meat in batches if necessary. As the meat browns, transfer to a platter. After all the meat has been browned, pour off all but 2 tablespoons of the fat from the pot, add the onions and garlic and reduce heat to medium and cover pot. Cook and stir until the onions are soft and beginning to color, about 5 minutes. As the onions cook scrape up any browned bits from the bottom of the pot. Add the wine to the pot and bring to a boil and scrape up any more browned bits from the bottom of the pot.

Return the beef, pancetta and coppa to the pot along with the tomatoes, beef stock or chicken broth, and bay leaf. Bring to a simmer, stirring well. Cover the pot and put the stew in the oven and bake until the beef is fork-tender, about 2 to 2 1/2 hours. Remove pot from the oven and degrease any fat from the surface. Taste the stew and if it is watery remove the solids and boil the liquid to concentrate the flavor and slightly thicken the sauce. Remove bay leaf and add back solids. Adjust seasoning with salt and pepper and serve.

* You can serve this savory stew over mashed potatoes or cooked wide noodles along with oven-roasted root vegetables such as carrots, onions and parsnips and a crusty loaf of sourdough French bread.

Super Bowl: David Beckham's H&M Campaign Is Revealed (Video)

David Beckham's highly anticipated H&M campaign has arrived, and between the two "action-packed spots" fans could vote for, they've chosen to see Beckham #Uncovered.

Of the two versions -- one titled "#Covered" and the other "#Uncovered" -- the latter came out ahead in fan voting and premiered during the Super Bowl. It showed the soccer superstar heading into a photo shoot, assumedly without any clothing based on the photographers' shocked faces.

H&M had previously posted a behind-the-scenes short on Jan. 23 that featured Beckham running barefoot, leaping from buildings and performing other stunts in the brand's bodywear collection.

"He's a magnet -- you very much move toward him," said director Nicolas Winding Refn (Drive, Only God Forgives) of Beckham in the short. "I needed to have David do all his own stunts. It always had to be David, even if it meant running on roofs, or jumping or climbing hundreds of feet up in the air."

Viewers who watched the commercial from Samsung Smart TVs could directly purchase the promo's featured pieces, making it the first shoppable ad on TV.

Fiji Retreat Where Bill Gates, Jim Carrey and Celine Dion Stayed Hits the Market

Want to sleep where Bill Gates, Michelle Pfeiffer and Jim Carrey all relaxed? One of Fiji’s most luxurious properties will be auctioned off Friday, Feb. 7. Although the retreat was previously listed for $12.99 million with an additional guest residence also available for $6.99 million, the Concierge Auctions event will start with no reserve.

Named after the long-tailed birds that fly around the island, Lawedua is one of only five homes on Wakaya, the crown-jewel island owned by Fiji Water founder David Gilmore, who made the purchase in 1973. Perched high above white sand private beaches, the 10-acre estate is surrounded by a barrier reef that is designated as a protected marine reserve.

Designed by late Ski Lankan architect Geoffrey Bawa, the home is an example of “tropical modernism” where colonial architecture is fused with clean lines and open spaces, along with vaulted ceilings, bamboo details and matted walls.

David O. Russell Is Obsessed With J. Crew Suits

What kind of suit does the most buzzed-about director in America don on a daily basis? The answer may surprise you. Turns out American Hustle director David O. Russell is obsessed with J. Crew suits, or so says the Stephen Galloway-penned profile covering the latest issue of The Hollywood Reporter, on newsstands today.

According to the piece, the Oscar-nominated filmmaker owns five identical three-piece suits from the American brand, which he wears every day. Our photo shoot was no different, with Russell sporting one of his signature ensembles on set and in the photos.

While Russell's exact J. Crew suit style of choice is unclear, the closest match seems to be the brand's Ludlow, which is made from Italian wool and comes in at $785 — vest and all.

No word whether or not he'll sport the Jenna Lyons-helmed brand to the Oscars or go for something more traditionally luxe, but we'll be keeping an eye out.

Ashley Greene Buys; Kelly Osbourne and Jordana Brewster Sell Homes

Ashley Greene has just purchased a home in Beverly Hills, according to real estate web site Redfin. The Twilight actress paid $2.435 million for the 27,000-square-foot, Spanish style spread. Located behind a gated drive, the lushly planted property features a three-bedroom, three-bathroom home with beamed ceilings, plenty of skylights and a backyard pool.

Purple haired rock progeny Kelly Osbourne has listed her petite West Hollywood pad for $1.349 million, reports web site Trulia. The E! Fashion Police co-star is selling the one-bedroom, two-bath 1,250-square-footer that she purchased nine years ago for $1.195 million. Built in 1952 and designed by Robert Byrd, the home is perched in the hills and features city views. Jonah Wilson of Hilton and Hyland has the listing.

Jordana Brewster is also putting her place on the market. The Brazilian-American actress has listed her three-bedroom, four-bathroom home for $3.8 million, reports Trulia. Residential real estate ace Ellen DeGeneres had owned the gated, 2,868-square-foot retreat from 1999 until 2002. Wilson of Hilton and Hyland has the listing.

Dress du Jour, 'Downton Abbey' Edition: Michelle Dockery's Lady Mary Sparkles in Green

The Dress: A lovely green, beaded slim dress, designed by costumer designer Caroline McCall, who works with her team to bring the show's to-die-for wardrobes to the small screen.

STORY: Lady Mary's 'Downton Abbey' Wedding Tiara for Rent

The Event: Dinner at Downton -- it's always a dressy affair.

Why We Dig: Lady Mary looks perfectly -- for lack of a better word -- ladylike in this green number. The top half of the dress is light brown with a dark green panel embellished with floral beading draped over its center. The intricate design is complemented by a dainty black beaded necklace and an upswept hairdo to keep the focus on the beadwork. The bottom half of the dress is also beaded, though it is a bit more simple, keeping the attention up top. Here, Mary is the epitome of elegance.

Offscreen, we love Dockery's style as well. Living about one hundred years after her character (the series began with the sinking of the Titanic in 1912), Dockery is elegant in her own right. A recent example: Dockery stunned in a black-and-white J. Mendel gown with a plunging neckline and high slit at the 2014 SAG Awards. The look, complete with bold red lips and sideswept bangs, was sexy while still remaining elegant and classy.

Mary or Michelle? Now, that's the eternal question. For the time being, we're seeing green. But that could easily change. It is awards season after all.
