Toss zucchini with the salt to coat well and let the mixture drain in a colander for 15-30 minutes. Wash salt off under cold running water. Squeeze the zucchini between the colander and your hands to remove excess liquid.

Heat oil in a medium pan over medium heat. Add zucchini and saute for 2 minutes. Remove pan from heat. Stir in the ricotta, Parmesan cheese and lemon zest until blended and set aside.

Spread a generous layer (Tester -- about 1/4 inch thick) on both pieces of the toasted foccacia with the ricotta mixture. Place under broiler and brown until hot, about 3-4 minutes. Top one side with a layer of sliced tomato and the other with a sliced chicken breast. Assemble the sandwich, slice in half diagonally and serve immediately.

Toss the mixture with the beef, cover, and marinate at room temperature for up to 2 hours or overnight in the refrigerator.

Preheat the oven to 325 degree oven.

In a large Dutch over or heavy lidded pot, heat 2 tablespoons of the olive oil over medium heat. Put in the pancetta and coppa ,and cook until the fat is rendered and pancetta is golden, about 5 minutes, stirring often. Remove the pancetta and coppa from the pot with a slotted spoon and drain them on paper towels. Toss the seasoned meat with the flour in a large shallow bowl. Turn the heat under the pan to medium high, shake any excess flour from the beef, and brown the meat on all sides. Take care not to crowd the pan; brown the meat in batches if necessary. As the meat browns, transfer to a platter. After all the meat has been browned, pour off all but 2 tablespoons of the fat from the pot, add the onions and garlic and reduce heat to medium and cover pot. Cook and stir until the onions are soft and beginning to color, about 5 minutes. As the onions cook scrape up any browned bits from the bottom of the pot. Add the wine to the pot and bring to a boil and scrape up any more browned bits from the bottom of the pot.

Return the beef, pancetta and coppa to the pot along with the tomatoes, beef stock or chicken broth, and bay leaf. Bring to a simmer, stirring well. Cover the pot and put the stew in the oven and bake until the beef is fork-tender, about 2 to 2 1/2 hours. Remove pot from the oven and degrease any fat from the surface. Taste the stew and if it is watery remove the solids and boil the liquid to concentrate the flavor and slightly thicken the sauce. Remove bay leaf and add back solids. Adjust seasoning with salt and pepper and serve.

* You can serve this savory stew over mashed potatoes or cooked wide noodles along with oven-roasted root vegetables such as carrots, onions and parsnips and a crusty loaf of sourdough French bread.

Super Bowl Style: Anthony Kiedis' Halftime Leggings, Decoded

While the crowd was freezing during the Super Bowl (Joe Namath was wearing a fur coat for a reason, or so we hope), the Red Hot Chili Peppers' lead vocalist, Anthony Kiedis, didn't mind the cold, as he hit the halftime stage topless with his fellow bandmates.

The bottom half of Kiedis' body was at least covered, in shorts and L.A.-based designer Jeremy Scott's printed leggings, no less.

During the Red Hot Chili Peppers' performance, the designer took to Instagram to share his excitement at seeing the rocker sporting his designs. Scott wrote: "How awesome was it that Anthony Kiedis wore my delete history screen saver print leggings for his #halftime performance w @BrunoMars!"

While Kiedis wore Jeremy Scott, Bruno Mars -- who opened the halftime show -- donned a gold metallic YSL blazer.

And to that, we say rock on, guys, rock on.

Michael Kors Is Fashion's Newest Billionaire

When Time released its annual 100 most influential people in the world list in April, Zac Posen penned an homage to fellow designer Michael Kors, writing: " Michael is poised to become fashion's next billionaire." And nearly a year later, that statement has come true.

Kors has become fashion's latest billionaire, as shares of Michael Kors Holdings Ltd. rose 18 percent to $90.39 on Tuesday, Feb. 4, at 12:08 p.m. in New York, reports Bloomberg. Having collected more than $700 million selling stock since his namesake company went public in 2011, it's considered fashion's most successful public offering to date. The 54-year-old designer owns roughly 2 percent of the company, a stake valued at about $390 million.

The American fashion icon — who served as a Project Runway judge from season one to season ten — started his label in 1981, after dropping out of New York's Fashion Institute of Technology. Since then, Kors' line — seen on the likes of first lady Michelle Obama and actresses Olivia Munn and Hilary Swank, to name a few — has expanded from women's ready-to-wear to include a menswear collection, two diffusion lines (MICHAEL Michael Kors and KORS Michael Kors), watches, fragrances and beauty products.

When reached by Pret-a-Reporter, a spokesperson for Kors declined to comment on the news.

David O. Russell Is Obsessed With J. Crew Suits

What kind of suit does the most buzzed-about director in America don on a daily basis? The answer may surprise you. Turns out American Hustle director David O. Russell is obsessed with J. Crew suits, or so says the Stephen Galloway-penned profile covering the latest issue of The Hollywood Reporter, on newsstands today.

According to the piece, the Oscar-nominated filmmaker owns five identical three-piece suits from the American brand, which he wears every day. Our photo shoot was no different, with Russell sporting one of his signature ensembles on set and in the photos.

While Russell's exact J. Crew suit style of choice is unclear, the closest match seems to be the brand's Ludlow, which is made from Italian wool and comes in at $785 — vest and all.

No word whether or not he'll sport the Jenna Lyons-helmed brand to the Oscars or go for something more traditionally luxe, but we'll be keeping an eye out.
