Cook, stirring frequently until the pancetta has released its fat and begun to turn brown and crisp. With a slotted spoon, transfer the pancetta to paper towels and leave the rendered fat in the pan. Season the short ribs with salt and pepper, add them to the pan and increase the heat to medium-high. Brown the meat on all sides, about 5 minutes. Remove the meat and add the onions, garlic, shallots, celery, and carrots. Cover the pot and decrease the heat to medium and cook the vegetables until they're soft, stirring occasionally, about 10 minutes. Add the wine, scrape up any browned bits from the bottom of the pan, increase the heat to high and boil until the wine has reduced by half. Add the tomatoes, stock, reserved pancetta, bay leaf, thyme, and parsley. Return the meat to the pot, partially cover, and cook at a simmer for 1 hour. Uncover, and continue to simmer until the meat is tender, another 1 to 2 hours or more (taste a piece to be sure).

Remove the meat with a slotted spoon and set aside. Degrease the surface of the sauce and boil until the sauce goes from watery to just beginning to thicken. Decrease the heat to a simmer and stir in the bittersweet chocolate, cocoa powder, rosemary, and add salt and freshly ground black pepper to taste. Return the meat to the pan and cook 5 minutes more to warm through. Serve at once over polenta or fresh pasta, or refrigerate and rewarm a day or two later.

Note: It's important in this dish to use high-quality Dutch-process cocoa powder which has a purer chocolate flavor Try to find bittersweet chocolate with a high percentage of chocolate liquor such as Valrohna or Sharffen-Berger.

Preheat oven to 300 degrees. Line a baking sheet with parchment paper or a silicone baking mat. In a medium bowl, whisk together flour, salt, cornstarch, and sugar. Stir in oil and egg whites; continue stirring until smooth. Gradually blend in 3 T water.

2. Drop four level 1-Tbsp portions of batter on baking sheet, spacing them at least 5 inches apart. Use a the back of a small offset spatula or a butter knife to spread each evenly into a 4 inch circle. Bake until dark golden brown, about 25 minutes. (Homemade fortune cookies need to be a bit dark in order to bend properly, and will be a little speckled in appearance rather than uniformly gold.) Meanwhile, set a muffin pan (with cups 2 3/4 inch wide) next to the oven.

3. Using a wide spatula and wearing cotton gloves, remove a cookie from the oven and flip it onto one gloved hand. Place a fortune in center of cookie while bringing edges together to enclose (don't fold it too firmly in half). Grasp ends of cookie and bend corners down to form a crescent. If cookie hardens too fast or starts to crack, return it to oven for 1 minute before continuing the fold. Once it's shaped, fit it, ends down, into a muffin cup to fi the shape as it cools. Shape other cookies the same way. Let cool completely. Repeat to bake and shape remaining cookies. Make Ahead: Up to 1 week, stored airtight at room temperature.

Santa Barbara Film Fest: Kendall Conrad Tells Us Where to Eat, Play and Spend

Accessories designer Kendall Conrad may have lived in Paris, New York and Los Angeles, but there's no place like Santa Barbara -- her current home. While living in the coastal California city, Conrad launched her first collection of luxe, skillfully crafted, sophisticated leather bags that has since become her eponymous line.

The designer, who owns three namesake stores that sell her luxury bags and fine jewels, travels between Santa Barbara and Los Angeles quite frequently. When she's not at her Montecito Country Mart shop (1024 Coast Village Rd.; 805-886-8344), the designer can be found at her Venice location (1121 Abbot Kinney Blvd.; 310-399-1333) and at the Brentwood Country Mart in Santa Monica (225 26th St.; 310-463-4718). Though she may spend a lot of time in L.A., the designer is no stranger to Santa Barbara's fine wine and oceanfront views.

To help us navigate the first weekend of the Santa Barbara International Film Festival -- which kicked off Jan. 30 and wraps up Feb. 9 -- we asked the designer to dish on all the best spots to check out while visiting the city also known as the "American Riviera."

SHOP

When it comes to home decor, Conrad said Maison K (1159 Coast Village Rd.; 805-969-1676) and William Laman (1496 Valley Rd.; 805-969-2840) are must-visits for their unique wares found around the globe. Upstairs at Pierre Lafond (516 San Ysidro Rd.; 805-565-1502) is another local gem that "can't be beat" for its furnishings and accessories. She also finds herself frequenting a recently opened ceramics store called Miri Mara in Carpinteria. "I bought a bowl [so far]. I'm going to start collecting from there," said Conrad. She added with a laugh: "I actually bought my husband's birthday gift there. Kind like a gift for myself." The designer is also fond of L.A.-based designer Jenni Kayne's Montecito lifestyle store (535 San Ysidro Rd.; 805-309-0550), for its housewares and children's gifts. Conrad is into James Perse (1016 Coast Village Rd.; 805-969-0300) and its classic, clean-cut clothes and A Tropical Affair (12 E. Cota St.; 805-730-1625) for its variety of cute bikinis.

DINE

Conrad recommends The Hungry Cat (1134 Chapala St.; 805-884-4701) for "its great seafood and uni on the half shell," noting that the sea urchin is fresh from the nearby Channel Islands, which she's learned is the world's biggest exporter of uni. For an alfresco experience, she enjoys dining at San Ysidro Ranch (900 San Ysidro Lane; 805-565-1700), where she "likes to sit outside where the loquat trees are located in the garden." Another hot spot is Tydes at the Biltmore hotel (1260 Channel Dr.; 805-969-2261). She compares the oceanfront dining experience to "being on a ship," which doesn't sound too bad when paired with an evening cocktail. Recently opened in downtown Santa Barbara is The Lark (131 Anacapa St.; 805-284-0370), where the popcorn, drizzled with salt and olive oil, is a must-try. For dessert, she says Rory's Ice Cream (1279 Coast Village Rd.; 805-565-7540) serves up the sweetest treats. Her ice cream flavor of choice? Chocolate.

For a good workout with a pretty view, there are plenty of hiking trails to trek though. Tangerine Falls and the Hot Springs are two of Conrad's favorites. Situated against a scenic mountain range is the Vedanta Temple (927 Ladera Lane; 805-969-2903); Conrad said it's a great place to "wander through its garden; it's very peaceful and nice." Another garden to visit is the popular Lotusland (695 Ashley Rd.; 805-969-3767), which Conrad called a "no-brainer" place to visit for anyone who drops by Santa Barbara. "It's the most spectacular garden in the world," said the designer. With the weather nearly always perfect for outdoor activities, the self-described "surf mom" says Rincon Beach Park (three miles east of Carpinteria adjacent to the Santa Barbara/Ventura county line; 805-568-2461) is her favorite spot, calling it the "most beautiful beach with the best waves."

Super Bowl Style: Anthony Kiedis' Halftime Leggings, Decoded

While the crowd was freezing during the Super Bowl (Joe Namath was wearing a fur coat for a reason, or so we hope), the Red Hot Chili Peppers' lead vocalist, Anthony Kiedis, didn't mind the cold, as he hit the halftime stage topless with his fellow bandmates.

The bottom half of Kiedis' body was at least covered, in shorts and L.A.-based designer Jeremy Scott's printed leggings, no less.

PHOTOS: Aaron Paul, Andy Samberg, Harry Connick Jr. Hit the Super Bowl

During the Red Hot Chili Peppers' performance, the designer took to Instagram to share his excitement at seeing the rocker sporting his designs. Scott wrote: "How awesome was it that Anthony Kiedis wore my delete history screen saver print leggings for his #halftime performance w @BrunoMars!"

While Kiedis wore Jeremy Scott, Bruno Mars -- who opened the halftime show -- donned a gold metallic YSL blazer.

And to that, we say rock on, guys, rock on.

Lady Mary's headdress comes from British jewelry retailer Bentley & Skinner, which specializes in antique jewels and engagement rings. The U.K. jeweler's website describes the sparkling tiara as follows: “An Important Georgian diamond tiara, the tiara in the form of a garland spray of leaves and floral clusters, pave-set throughout with old-cut diamonds, weighing an estimated total of 45 carats, cutdown collet-set in silver to a yellow gold mount, convertible to two brooches, gross weight 75.5 grams on frame, circa 1800.”

The tiara worn by Dame Maggie Smith during the season two Christmas special is also available for rent at 5,700 pounds (roughly $9,000), alongside a similarly pricey deposit.

Bruce Springsteen's Daughter Named Gucci's Equestrian Ambassador

Bruce Springsteen's daughter, Jessica Springsteen, has been named to Gucci's team of equestrian ambassadors.

Gucci's latest riding collection, developed especially for Jessica, marks the fourth year since the Italian fashion house returned to equestrian design in December 2009, after a 20-year hiatus, when the luxury brand became the sponsor of the Gucci Masters in Paris.

PHOTOS: Hollywood's Biggest Stars Celebrate Third Annual LACMA Art + Film Gala

"Jessica is a great horsewoman, with a very exciting and positive riding style," said Frida Giannini, Gucci’s creative director, in a statement. "Her passion for horse riding, and show jumping in particular, is something that I can really relate to, as I have been riding ever since I was a little girl. Jessica brings the elegant, dynamic spirit of Gucci alive, and I have ensured that the design of this new wardrobe provides her with pieces that manage to be both technically correct and stylish."

The equestrian collection features technical clothing and accessories for show jumping and training, while epitomizing the style and glamour of horse riding. A key feature from the range is the Gucci crest — which Giannini reintroduced to the House from the archives in 2008 — featuring a heraldic shield incorporating the figure of a knight in armor holding a suitcase and handbag in place of a sword and shield. Jessica will have a personalized crest, featuring her initials: J.R.S.

"I have been riding since I was four years old, and grew up around horses. I love the freedom you feel on horseback, and enjoy the discipline of competition. Riding in the collection that Frida has created for me is an honor and great fun — it combines the best of sport and style," said Springsteen.

She will join the existing Gucci equestrian ambassadors: Monaco royal Charlotte Casiraghi, show jumper Edwina Tops-Alexander and French actor Guillaume Canet.

Costume Designer Catherine Martin to Be Honored by Rodeo Drive's Walk of Style

Following in the well-heeled footsteps of past honorees including Tom Ford and Diana Vreeland, costume designer Catherine Martin has been selected for induction into the famed Rodeo Drive's Walk of Style.

PHOTOS: 'Great Gatsby' Premiere: Leonardo DiCaprio, Jay-Z and Carey Mulligan Hit the Red Carpet

Tapped for her contributions to the worlds of style and entertainment, Martin's nomination celebrates her extensive achievements, which includes collaborations with stars including Leonardo DiCaprio, Ewan MacGregor, Beyonce and Tobey Maguire, and her lauded work for costume design and art direction for films including Romeo and Juliet, Australia, and last year's The Great Gatsby film adaptation.

“It’s really amazing that she was able to create something from that time period that’s so current and relevant was also true to that time as well,” says Peri Ellen Berne, chair of the Rodeo Drive Walk of Style, which was conceived by the late, great Fred Hayman and launched in 2003.

For her designs in The Great Gatsby, Martin partnered with brands including Prada, Brooks Brothers and Tiffany & Co. to create costumes that reflect the era. "The overall effect is seamlessly opulent and it transported us in a very modern way into [the 1920s]," says Berne.

STORY: Baz Luhrmann and Catherine Martin to Design Miami Hotel

The 21st recipient of the prestigious award -- which includes a plaque embedded in the tony street -- Martin is also the first Australian to hold the honor. Martin’s sketches for The Great Gatsby will be showcased in an outdoor exhibit on Rodeo Drive from Feb. 17 to March 2.

Set to take place on Feb. 28 at Beverly Hills’ Greystone Mansion, the induction takes place ahead of this year's Oscars celebrations -- a timely coincidence taking into account Martin’s own Academy Award nominations for The Great Gatsby, as well as her 2001 Oscar wins for Moulin Rouge for best costume design and best art direction. “There’s a really festive feeling in the air,” says Berne.

Inside Howard Stern's 60th Birthday Bash: A-Listers Turn Out in Droves to Celebrate Shock Jock

Howard Stern 60th Birthday - H 2014Howard Stern and wife Beth Ostrosky Stern

Security was tight enough for a presidential visit, but the reason everyone was on high alert was for the King of All Media. Radio shock jock legend, movie star, television personality and judge on America’s Got Talent, Howard Stern was in the house for his 60th birthday party. The four-hour event at the Hammerstein Ballroom on 34th Street in New York City was pretty much a Stern broadcast with a roster of stars as big as an awards show.

The show was put on by Sirius XM satellite radio, Stern’s home since 2006, and broadcast live at siriusxm.com. The stage was outfitted with a radio booth and couch to the left of the events, while at center stage host Jimmy Kimmel and a dazzling array of actors, comedians and musicians performed for the man of the hour. The house was packed with contest winners in the balconies while the floor was filled with star-studded tables of performers and onlookers, from Dr. Drew Pinsky and Rachael Ray, to Barbara Walters and Stern’s wife, Beth Ostrosky Stern, and comedians David Spade and Tracy Morgan.

EXCLUSIVE VIDEO: Watch Jerry Seinfeld, Howard Stern Argue in 'Comedians in Cars Getting Coffee'

Rob Zombie and his band kicked off the evening with a rocking version of “The Great American Nightmare” and was followed by an appearance by George Takei. Takei jokingly referred to Zombie as “Rob Zodiac” and introduced Kimmel as the emcee for the event. As master of ceremonies, Kimmel was in excellent form as he ran down a list of Stern’s accomplishments – and compared him to Picasso – before introducing the man himself.

At 60, Stern is sporting a touch of gray in his beard, but looks almost exactly the same as he ever did. Thanking Kimmel, he took his place at the desk and brought out his longtime sidekick Robin Quivers. They bantered a bit and then the house band was introduced, mid-tempo ballad kings Train.

From there on in it was an onslaught of entertainment. The Black Keys played “Lonely Boy” and then Kimmel turned to Jeff Probst, who, with a cameraman following, worked the tables on the floor chatting with various celebs who offered birthday wishes to Stern.

PHOTOS: Exclusive Portraits of Emmy Icons Tina Fey, Jerry Seinfeld and Bryan Cranston

One of the evening's highlights was an appearance by Joan Rivers and comedian Jeff Ross, who treated their moment like a celebrity roast with a number of dicey zingers. Ross: "Howard has been in radio so long he bought Robin at an auction." Rivers: “Howard keeps a picture of Beth in his wallet; Beth keeps a picture of Howard’s wallet.”

Later, John Mayer ripped it up on guitar on a version of Bob Dylan’s “Rolling Stone;” and Bryan Cranston drew cheers and thunderous applause simply for showing up. He tweaked the crowd with a signature line from Breaking Bad, and seemed to relish the moment when he said, “Say my name!” Then he offered that Stern “is the one who knocks.”

Embattled New Jersey governor Chris Christie was greeted with a mix of cheers and loud boos and offered his regards before introducing “the man from New Jersey you want to see,” Jon Bon Jovi, who did a version of “Dead or Alive.” Shortly thereafter, Maroon 5 frontman Adam Levine joined Train for a version of “Purple Rain” that made a lot of people cheer and sent others to the bar. Comedian Louis C.K. arrived next to join Stern on the couch for a chat. Train later played two songs, “Drive By” and a cover of Led Zeppelin’s “The Ocean.”

PHOTOS: Rule Breakers 2013: 'Duck Dynasty,' Matthew McConaughey, 'Breaking Bad'

Jimmy Fallon appeared and did impressions of comedians who couldn’t make it, hitting with a spot-on Chris Rock. Soon-to-be Late Night host Seth Meyers showed up to offer salutations as well. Video tributes from Neil Young, The Beach Boys, Kathie Lee Gifford, James Hetfield of Metallica, Paul McCartney, Arnold Schwarzenegger and others played between acts.

David Letterman made a surprising and rare live appearance and chatted candidly with Stern for 30 minutes or so, offering his memories of the time the two worked for NBC and Letterman’s drama with The Tonight Show. Jewel got up to sing a song and was followed by Rosie O’Donnell, who serenaded Stern with a parody song from Grease about their former feud. Later, Quivers was serenaded by show regulars Little Mikey, Psych and Eli, then given a strip-tease lap dance by Ryan Phillippe.

John Fogerty, of whom Stern is a huge fan, took a turn onstage, playing “Bad Moon Rising” and “Fortunate Son;” Dave Grohl performed “Everlong” and “My Hero,” and later Robert Downey Jr. came out to introduce Steven Tyler, who played “Dream On” at a white piano, toasting, “Here’s to hell, Howard. May we have as much fun there as we did getting there!” Stern thanked everyone, taking time to mention all the people at Sirius and his long-suffering producer, Gary Dell'abate and co-host Quivers. Ending the night, Tyler brought out special guest Slash and the two of them played “Walk This Way” with Train featuring Grohl on drums as everyone got up to dance.

Sirius XM sure knows how to throw a party, and for Howard Stern’s 60th birthday they really went over the top. The show will be rebroadcast on Sirius XM Monday at 6 a.m.

The Best Natural Ingredients for Face Masks

There are many reasons to make natural face masks. It can save money on expensive face mask products. It ensures you know exactly what ingredients are being used. Whatever the reason, learning which ingredients make great face masks is useful and healthy for the skin.

Natural ingredients are mild and widely used, but before applying an ingredient to the whole face, it is a good idea to perform a test. Place a small bit of the ingredient on a patch of skin, either on the jaw line or on the back of the hand. This ensures an allergic reaction will not occur with the ingredient.

For dry skin, using a honey face mask will moisturize naturally. Any type of honey will work for this kind of mask. Leave it on for a few minutes, then wash with warm water and pat dry. Extra-virgin olive oil also makes a great face mask by itself.

Combining olive oil and honey can also create a useful face mask. To create this formula, mix two teaspoons of apple cider vinegar, one teaspoon of olive oil, and one teaspoon of honey. Apply to the face and leave on for ten to fifteen minutes. Rinse off with tepid water and gently pat the face dry.

Unflavoured, plain yogurt is great for toning any type of skin. It has to be unflavoured and plain. Do not try to use vanilla flavoured, or Greek yogurt. For this kind of face mask, apply the yogurt in a thin layer and let it sit for a few minutes. Rinse and pat dry.

Oatmeal has been known for its beauty potential for decades. The popular oatmeal bath soak alerted people that oatmeal can also be used for other aspects of beauty. For a basic face mask, grind the oatmeal for a bit in a food processor. Add water to create a paste, then apply to the face and let it sit for a few minutes.

When time is not an issue, creating an oatmeal infusion does wonders. Mix three tablespoons of herbs, 2/3 cup of boiling water, and one tablespoon ground oatmeal. Steep the mixture, allow it to cool, and then strain it.

For the herbs, different kinds have varying effects depending on the type of natural skin they are working with. Lavender, basil, and mint are great for any skin. Breakouts respond well to rosemary and thyme. Parsley, lemon balm, and fennel are good for dry skin. Sage, yarrow, and lady's mantle work well for oily skin.

Flax seeds are a magical food. Eating them provides omega-3 fatty acids, which are essential to health and are a great fertility secret. People can also take advantage of the omega-3 oils in flax seeds to utilize them in an easy to make face mask.

In a small bowl, mix two tablespoons of flax seeds and just enough water to cover them. The seeds should swell and the water should transform into a gelatinous texture. This gel should be spread over the face and be allowed to sit until it is dry. The mask should be rinsed off with tepid water and patted dry.

Egg whites can be soothing and leave the skin glowing. Whip the egg whites, apply to the skin, and leave them on until they are dry. Rinse the egg whites off and pat the face dry. Natural clay face masks draw out impurities. The clay can be found in a cosmetics section of a natural foods store. Mix with water and apply to the face, but not near the eyes. Allow it to dry and rinse.

One of the best ingredients for face masks is Shea butter. Natural Shea butter can be applied directly to the face. However, if money is not an issue, investing in specially formulated natural face masks with Shea butter will provide the most benefits to the skin.
