Bean Curd in Pork and Chile Sauce
Heat a wok or heavy large skillet over high heat. Add the oil, garlic, black beans, ginger, and finely chopped green onion. Stir-fry for 30 seconds. Add the pork and any liquid and stir fry, using your spatula or spoon to break up the meat, until the pork changes from pink to gray, about 1 to 2 minutes. Stir in the chicken stock or broth, remaining hot bean paste, and vinegar. Add the tofu if doing the braised version and half the thin green onion strips. Reduce the heat to medium-high and gently toss bean curd in the sauce, taking care to not break the tofu cubes. Cook for 2 minutes. Bring to a boil, stir the cornstarch to recombine, and add it to the pan. Cook for 30 seconds or until the sauce has thickened. Sprinkle with the ground Szechwan or black peppercorns. If serving hot, spoon the bean curd into a serving bowl. Garnish with a drizzle of sesame oil and the remaining green onions and cilantro leaves. Serve as an entree over steamed rice.
To make the salad version, scatter a handful of mung bean sprouts or shredded cucumber slices (or both) over a shallow bowl or platter. Arrange soft tofu cubes over the vegetables, and the hot pork sauce over all. Sprinkle with sesame oil, reserved green onions, and cilantros leaves and serve as a first course.
Chef's Note: Chinese hot bean paste comes in a jar and is made with soy beans, spices, and hot chilies. It will keep, refrigerated, for several months. Sriracha chile sauce is a Thai and Vietnamese condiment made with chilies and is less salty than the bean paste. Either one works well in this recipe.
* While tofu can be pretty bland stuff on its own, its most redeeming quality to my mind, is its ability to act like a sponge by absorbing whatever liquid it is bathed in. The finished texture of this dish can vary according to your preference, depending on which kind of bean curd you buy, either the soft tofu or firm or extra-firm. If you prefer the "custardy" Japanese-style tofu, then cube it and serve it cold as a salad or first course, with bean sprouts and cucumber and the hot sauce poured over all. If you like the texture of the firm tofu (which is sold labeled as firm or extra firm) you can braise it in the sauce and serve the dish warm or at room temperature.

Uncover and increase heat to medium-high. Add bay leaves, garlic and a pinch of salt and pepper and continue cooking for 12-15 minutes, stirring frequently, until the liquid has evaporated and the mushrooms are tinged golden-brown.
Stir in broth, scraping up any bits stuck to the bottom of the pot, and bring to a boil. Stir in farro and bring back to a boil. Reduce heat to medium-low and simmer for 25-30 minutes, stirring frequently, until all the liquid is gone and the farro is tender. Stir in squash and shallots and serve with grated Parmigiano-Reggiano cheese.
* Farro is an ancient strain of emmer wheat. You can find it in many specialty shops and also online at ChefShop.com.

Add in the fried prawns, season them with the spiced salt and toss to mix well. Serve immediately.
Note: This recipe can also be adapted with fried tofu, chicken or even fish for an Asian version of Fish and Chips. Spiced salt 1/2 cup kosher salt 1/2 tbsp Szechuan peppercorn, toasted and crushed 1/4 tsp 5 spice powder
Mix the salt, Szechuan pepper and 5-spice powder and store in an airtight container. It will store well for one month in a pantry.

Spice Cake
Add fruit mixture in a large mixing bowl. Add the flour to the fruit mixture with the baking powder and soda, salt, and egg. Stir until smooth. Pour into an oiled 9-inch square baking pan and bake, about 45 minutes, until a skewer inserted in the middle comes out clean. Cool on rack before serving. Serve with dollops of whipped cream, ice cream, or go ahead and splurge and serve both.

How to Recreate Miley Cyrus' W Magazine Mani
"I’ve pretty much touched everyone’s hands in Hollywood, since Tina Turner,” celebrity nail artist Lisa Jachno told Pret-a-Reporter, whose memorable manicures have been seen on everyone from Jennifer Aniston to Jennifer Garner, and as of late, on Miley Cyrus’W magazine cover debut.

"The inspiration for the look came from the photographers Mert [Alas] and Marcus [Piggot], who already had an idea of what they wanted," said Jachno. Cyrus, who had just stepped off a plane from Europe, arrived to the shoot sporting a vivid red gel polish painted on a set of long acrylic nails, which prevented Jachno from soaking them in acetone to remove the shade. Working against the clock to bring the photographer’s vision of bold, edgy nails to life -- a stark contrast from Cyrus' pale complexion, platinum locks and bleached-out brows -- Jachno first shaped the starlets' tips into what she calls a "rock and roll shape," tapered with a round tip on the end. Jachno buffed down Cyrus’ gel paint job before applying two glossy coats of Chanel Black Satin polish (and painting her toes to match), which eclipsed the vivid red hue beneath.
To get the look at home, Jachno suggests having some length to your nails or using press-ons. The shape can be achieved using a 180-grit nail file, strong enough to fashion the nail into a triangle shape with a softened tip. "I always close my hand and check it from both views," advised Jachno.
This is not the first time Jachno has worked with tongue-wagging Cyrus; she vividly recalls being on set with the starlet for the first time when she was 13 years old. "I hadn’t seen her for a long time," said Jachno. "I was very impressed with how grown up she was."

Naomi Campbell's modeling competition series The Face has lined up several brand partnerships for its second season.
Oxygen Media and Shine America on Wednesday said that Pamella Roland, Alex and Ani, Liebeskind Berlin and Tweezerman have joined grand-prize partner Frederic Fekkai and editorial partner Elle Magazine as beauty brand partners.
The exclusive brand partnerships have both on and off-air extensions including in-show integrations, online cross promotions, the launch of consumer products and branded video content.
“What makes The Face so great is its authenticity and real life challenges, which allow us to integrate top fashion and beauty brands organically into the series” said Jane Olson, senior vp marketing and brand strategy at Oxygen Media. “These partnerships extend beyond the TV screen, giving viewers new ways to engage and interact with the show and providing our partners a unique level of exposure and awareness with our young female audience.”

When Time released its annual 100 most influential people in the world list in April, Zac Posen penned an homage to fellow designer Michael Kors, writing: " Michael is poised to become fashion's next billionaire." And nearly a year later, that statement has come true.

Kors has become fashion's latest billionaire, as shares of Michael Kors Holdings Ltd. rose 18 percent to $90.39 on Tuesday, Feb. 4, at 12:08 p.m. in New York, reports Bloomberg. Having collected more than $700 million selling stock since his namesake company went public in 2011, it's considered fashion's most successful public offering to date. The 54-year-old designer owns roughly 2 percent of the company, a stake valued at about $390 million.
The American fashion icon — who served as a Project Runway judge from season one to season ten — started his label in 1981, after dropping out of New York's Fashion Institute of Technology. Since then, Kors' line — seen on the likes of first lady Michelle Obama and actresses Olivia Munn and Hilary Swank, to name a few — has expanded from women's ready-to-wear to include a menswear collection, two diffusion lines (MICHAEL Michael Kors and KORS Michael Kors), watches, fragrances and beauty products.
When reached by Pret-a-Reporter, a spokesperson for Kors declined to comment on the news.
For Rent: Lady Mary's 'Downton Abbey' Wedding Tiara
All brides need a little something to borrow on their big day. How about the 45-carat tiara worn by Michelle Dockery on Downton Abbey?
Dockery originally wore the Georgian diamond floral piece in season three's first episode when her character, Lady Mary, wed Matthew Crawley, played by Dan Stevens. Today, the tiara is available for rent for 1,250 pounds (roughly $2,000) a day on top of a hefty 125,000-pound (roughly $200,000) deposit to cover the cost of the tiara, according to The Telegraph.

Lady Mary's headdress comes from British jewelry retailer Bentley & Skinner, which specializes in antique jewels and engagement rings. The U.K. jeweler's website describes the sparkling tiara as follows: “An Important Georgian diamond tiara, the tiara in the form of a garland spray of leaves and floral clusters, pave-set throughout with old-cut diamonds, weighing an estimated total of 45 carats, cutdown collet-set in silver to a yellow gold mount, convertible to two brooches, gross weight 75.5 grams on frame, circa 1800.”
Bentley & Skinner is famous for collaborating with artist Damien Hirst on his artwork, "For the Love of God," which features a sculpted human skull cast in 2,156 grams of platinum and set with 8,601 perfect diamonds.
The tiara worn by Dame Maggie Smith during the season two Christmas special is also available for rent at 5,700 pounds (roughly $9,000), alongside a similarly pricey deposit.

Inside Howard Stern's 60th Birthday Bash: A-Listers Turn Out in Droves to Celebrate Shock Jock
Howard Stern and wife Beth Ostrosky SternSecurity was tight enough for a presidential visit, but the reason everyone was on high alert was for the King of All Media. Radio shock jock legend, movie star, television personality and judge on America’s Got Talent, Howard Stern was in the house for his 60th birthday party. The four-hour event at the Hammerstein Ballroom on 34th Street in New York City was pretty much a Stern broadcast with a roster of stars as big as an awards show.
The show was put on by Sirius XM satellite radio, Stern’s home since 2006, and broadcast live at siriusxm.com. The stage was outfitted with a radio booth and couch to the left of the events, while at center stage host Jimmy Kimmel and a dazzling array of actors, comedians and musicians performed for the man of the hour. The house was packed with contest winners in the balconies while the floor was filled with star-studded tables of performers and onlookers, from Dr. Drew Pinsky and Rachael Ray, to Barbara Walters and Stern’s wife, Beth Ostrosky Stern, and comedians David Spade and Tracy Morgan.

Rob Zombie and his band kicked off the evening with a rocking version of “The Great American Nightmare” and was followed by an appearance by George Takei. Takei jokingly referred to Zombie as “Rob Zodiac” and introduced Kimmel as the emcee for the event. As master of ceremonies, Kimmel was in excellent form as he ran down a list of Stern’s accomplishments – and compared him to Picasso – before introducing the man himself.
At 60, Stern is sporting a touch of gray in his beard, but looks almost exactly the same as he ever did. Thanking Kimmel, he took his place at the desk and brought out his longtime sidekick Robin Quivers. They bantered a bit and then the house band was introduced, mid-tempo ballad kings Train.
From there on in it was an onslaught of entertainment. The Black Keys played “Lonely Boy” and then Kimmel turned to Jeff Probst, who, with a cameraman following, worked the tables on the floor chatting with various celebs who offered birthday wishes to Stern.

One of the evening's highlights was an appearance by Joan Rivers and comedian Jeff Ross, who treated their moment like a celebrity roast with a number of dicey zingers. Ross: "Howard has been in radio so long he bought Robin at an auction." Rivers: “Howard keeps a picture of Beth in his wallet; Beth keeps a picture of Howard’s wallet.”
Later, John Mayer ripped it up on guitar on a version of Bob Dylan’s “Rolling Stone;” and Bryan Cranston drew cheers and thunderous applause simply for showing up. He tweaked the crowd with a signature line from Breaking Bad, and seemed to relish the moment when he said, “Say my name!” Then he offered that Stern “is the one who knocks.”
Embattled New Jersey governor Chris Christie was greeted with a mix of cheers and loud boos and offered his regards before introducing “the man from New Jersey you want to see,” Jon Bon Jovi, who did a version of “Dead or Alive.” Shortly thereafter, Maroon 5 frontman Adam Levine joined Train for a version of “Purple Rain” that made a lot of people cheer and sent others to the bar. Comedian Louis C.K. arrived next to join Stern on the couch for a chat. Train later played two songs, “Drive By” and a cover of Led Zeppelin’s “The Ocean.”

Jimmy Fallon appeared and did impressions of comedians who couldn’t make it, hitting with a spot-on Chris Rock. Soon-to-be Late Night host Seth Meyers showed up to offer salutations as well. David Letterman made a surprising and rare live appearance and chatted candidly with Stern for 30 minutes or so, offering his memories of the time the two worked for NBC and Letterman’s drama with The Tonight Show. Jewel got up to sing a song and was followed by Rosie O’Donnell, who serenaded Stern with a parody song from Grease about their former feud. Later, Quivers was serenaded by show regulars Little Mikey, Psych and Eli, then given a strip-tease lap dance by Ryan Phillippe.
John Fogerty, of whom Stern is a huge fan, took a turn onstage, playing “Bad Moon Rising” and “Fortunate Son;” Dave Grohl performed “Everlong” and “My Hero,” and later Robert Downey Jr. came out to introduce Steven Tyler, who played “Dream On” at a white piano, toasting, “Here’s to hell, Howard. May we have as much fun there as we did getting there!” Stern thanked everyone, taking time to mention all the people at Sirius and his long-suffering producer, Gary Dell'abate and co-host Quivers. Ending the night, Tyler brought out special guest Slash and the two of them played “Walk This Way” with Train featuring Grohl on drums as everyone got up to dance.
Sirius XM sure knows how to throw a party, and for Howard Stern’s 60th birthday they really went over the top. The show will be rebroadcast on Sirius XM Monday at 6 a.m.
#MusicMonday: Christian Siriano's New York Fashion Week Playlist
Even after rocking a dozen showings at New York Fashion Week and dressing names like Sarah Jessica Parker, Lady Gaga, Taylor Swift and Victoria Beckham on the red carpet, Christian Siriano still has his share of stress.
So just days before showing his Fall 2014 collection, he and his team are listening to a lot of Lorde, Lana Del Rey and Sarah McLachlan when putting the finishing touches on the Parisian-inspired pieces at his newly-expanded design studio in New York City's Chelsea neighborhood.

"I like pretty and calm, soft even," he tells Pret-a-Reporter. "I've been listening to Katy Perry's 'Spiritual' every morning, when I get ready, because it's calming and beautiful. It's been putting me in a really great mood this season." So much so that he's even found time to offer a few perks to an Indiegogo campaign (set up by fiance/electronic music producer Brad Walsh and fashion writer Nicolette Mason) to raise funds for Step Up Womens Network before his show on Saturday
We supposed that the CFDA designer knows a thing or two about beats, both on and off the runway. And we were right. So in honor of #MusicMonday, Siriano shared what he listens to when prepping for his New York Fashion Week showing (and the launches of his eyewear line in March and namesake fragrance later this year), told us what the secret is to working with your music-producer partner, and also passed along a playlist of our very own. Check out the calming collection below:
How integral is the music to your upcoming collection?
Christian Siriano: The collection has a lot of Parisian undertones because it's inspired by a French photographer, Fernand Fonssagrives; his wife Lisa is our muse of the season. She's "lady," but we want her to be cool, and have a stylish feeling. When Brad and I were talking about the music, we like songs from Miss Kittin. All of her sounds have a little bit of a French undertone, but with a little rock or electro. We have some of her, and then he's creating something original, like he always does. It's a lot of energy.
What is usually the strategy for putting together a soundtrack for a show?
Siriano: I like singers, but in a show, sometimes it feels like you're at a concert, so I don't always like too much vocal. But that depends on the season -- When we had our Russian opera season, we wanted an opera singer.
But when you have fittings or clients, you have to have an atmosphere. Right now, I'm on a Garbage Pandora station fix because we're having a '90s moment now, but then sometimes, during Market Week, we play classical because we want it to feel elegant for all the buyers. For model castings, I play the gayest music ever -- Madonna, Britney Spears, Rihanna -- because I want everyone to have energy. You have 200 girls hanging around, you can't have it be awkward. It all depends on who's here and what's happening that week.
What are some of the struggles when working with your partner on a creative venture?
Brad Walsh: [looks at Siriano] Him. He knows what he likes, but he has no idea how to express it, which is very frustrating.
Siriano: Only in music, because I don't know what things mean. If I were working with some other producer, we wouldn't fight like we fight -- but then again, I wouldn't say the things that I say.

Walsh: And we would have meetings during the day, not at 10 p.m. after a long day.
Siriano: We always work on the music from 10 at night to 1 in the morning, so we're always tired of each other.
Walsh: But it always works, after 6 years, 11 or 12 seasons. I know what he wants now too. Also, I don't work well with other people in music. Every collaboration I've ever done, I do remotely. I do not write songs well with people, but he's the only person I can really work with, because neither one of us is afraid to say what we really want to say. Like, if you were to make a dress with me -- I mean, I'm no designer -- you'd say, "No, that's stupid, why would you say that?" But anyone else, you couldn't say that.
What is the last concert you went to?
Siriano: Brad used to go a lot, but now, we go see friends. We saw the B-52's and the Go-Gos, because we know them, but I had never seen them before and I thought they were amazing.
Walsh: And we saw Jay Z at Barclays. He was amazing.
Siriano: We clearly were intoxicating and having fun, but it was a great show. He kept you captivating and he doesn't do anything. No set -- that I thought was really an accomplishment. And I don't even know his music very well, but I really liked it.

What concert are you looking forward to next?
Siriano: We're making a trip to Vegas for Britney. She doesn't really sing, but who cares? That's what so genius. If you think about Britney, she doesn't even do press, or go places, on talk shows -- and she's still the top earner. We're gonna do that around Brad's birthday in June.
Do you have ideas about the music for your upcoming wedding?
Walsh: I do sometimes; I make a little mental note. I think no matter what we do, it's going to be small and private, and I would like a friend to sing, more than a DJ or something.
Siriano: We were watching Downton Abbey last night, and they were having a party with a classical string orchestra outside in the garden. So I would love if the reception is very lady-debutante, and then the party is like, out of control. I want to be booty-dancing! I want really beautiful, chic, gloves, amazing, and then I want it to be low-down dirty. Wouldn't that be amazing to have the two? Because that's who we are! It'd be really, really, really fun.
